Summer is coming and fresh plump tomatoes are now appearing in the markets of Paris - and we've got the perfect recipe for them!

We’re finding gorgeous products on the Market these days - and there is nothing like plump beautiful tomatoes for a sign that summer is coming! When we can get our hands on them, one of our favorite go-to dishes for something quick and delicious Is the classic French Tomato Tarte. Like vinaigrette, every family has ‘their’ version but for us, less is more, and summer nights call for a no fuss recipe with delicious results. Perfect for a picnic lunch outside, or a light and flavourful dinner served with a fresh salad, this classic recipe is everything that's great about French cuisine - simple, tasty, seasonal. If you haven’t made one yet, give it a try, and don’t be afraid to personalize it! Tarte à la Tomate

Ingredients

Pâte Feuillettée - we're keeping things super simple here: when it comes to puff pastry you can simply buy the dough ready-to-roll from your supermarket.

Dijon Mustard

A selection of juicy tomatoes - you can use whatever you like, different shapes, colours, types, whatever strikes your fancy!

A splash of Olive Oil

Salt and Pepper 

Method

Preheat your oven to 200°C.

Place your puff pastry base onto a non-stick baking tray, then prick the surface with a fork. Bake the pastry at 200°C for 10-15 minutes.

While the pastry is pre-baking, slice your tomatoes fairly thinly - around 3mm per slice.

Remove the pastry from the oven and spread around two tablespoons of Dijon mustard onto the pastry base - the layer can be thin, but not so much that you can clearly see pastry through the mustard. Reduce the heat of the oven to 180°C.

Arrange your beautiful tomato slices on top of the pastry, this works great when you have different colours!

Season with salt and pepper, and drizzle with a little olive oil - you can also sprinkle over some herbes de provence if you like. 

Bake at 180°C for 25-30 minutes until the pastry is a rich golden brown. Serve with a fresh green salad.
